Batch Meal Like a Boss – My Go-To Comfort Food Recipes

I am refining 2019 in many areas of my life, and since kicking off the New Year I’ve been the Queen of batch meal cooking.  Yeah thats right, betcha didn’t think that was a thing, did ya?!  Well, you’re right it isn’t – but maybe I should make it a thing.  You think?  OK, sorry – got sidetracked.

Sundays have been dedicated to meal preparation for the week.  I’m not sure if you know this about me or not, but my husband and I are what you would affectionately refer to as “road warriors”.  We spend a lot of time in our cars commuting during the week unfortunately (thank goodness for podcasts, good ones are lifesavers!) so the last thing I want to do when I come home after work is to be chained to the kitchen. Ugh, and then try to come up with a delicious yet nutritious meal, I already feel the stress of it all.

So for the sake of mental (and body) health, we batch meal on Sundays.  And I totally love it!  The following recipes have been in the rotation for the last couple of months and every crumb gobbled up!  Did I mention I have a soon-to-be five year old, so you know the struggle is real when it comes to finding meals that he loves (and perhaps doesn’t know are healthy). Hey, what he doesn’t know at this stage won’t hurt him.

My Mom’s Casserole Recipe

This one is near and dear to my heart for obvious reasons.  My mom passed away in April 2012, so she never got to meet my little man.  That said, they have been connecting through food. This was one of my favourite dishes my mom made when I was growing up and I guess the apple doesn’t fall far from the tree because my son inhales this casserole.  It is super easy to prepare and cook, and the yield is fantastic!  I don’t know where she got this recipe or if she just created it (she was a fantastic cook and I wish I paid more attention when I had the chance), but it is delicious.  Even if you aren’t a fan of mushrooms like both my husband and son, they still eat it up.  Give it a try!

My Mom's Casserole Recipe

Make a batch of comfort food your whole family will enjoy!

Ingredients

  • 2 packages Ground Turkey or Chicken
  • 1 box Bowtie Pasta
  • 1 large can Diced Tomatoes
  • 1 small can whole Mushrooms (picky eaters can remove easily)
  • 1 small can Golden Mushroom Soup

Instructions

  1. Pre-heat oven to 375 degrees.

  2. Brown meat on stove-top.

  3. Cook pasta half-way according to the directions on the box.

  4. In and oven safe dish combine meat, pasta, mushrooms, tomatoes and can of golden mushroom soup.

  5. Bake at 375 degrees for approximately 25 mins.

  6. Enjoy!

Is it just me or did egg muffins become the rockstars of breakfast seemingly overnight?!  Honestly they are right up there with avocado toast.  It’s like these two dishes fist bumped and said “let’s do this!”  However they sorted this out, these two are batch meal approved!  I talked about this recipe last summer in a previous post, “5 Hacks To Help Me Cope With My Morning Routine” and this recipe is still a staple.  I generally mix it up between vegetarian and meat versions, but these muffins are so delicious and convenient for me to chow down on my way to work.  Just pop ’em in the microwave for 30 seconds are you’re good to go.

Vegetarian Lasagna

I borrowed “The Forest Feast Gatherings Cookbook” by Erin Gleeson from my bestie (and I still have it a year later – I’m terrible, sorry Tricia!).  But, I have to say – totally worth it.  This book features simple vegetarian menus for hosting friends and family. The one recipe that keeps me coming back for seconds (ha, nice pun) is the squash lasagna recipe.  I’ve made this for not only batch meals, but girls nights and even our Christmas Eve gathering last year. It always gets rave reviews even from the carnivores in the group.

Quick tip: Instead of roasting the squash in the oven for an hour we cook ours in the Instapot for 5 mins.

Vegan Chickpea And Roasted Cauliflower Curry Soup

This is the latest recipe that we have added to our batch meal rotation.  It’s from Style By Emily Henderson.  It is delicious and super filling and a tad on the spicy side, so if you’re a little sensitive to spice keep this in mind.  My husband and I love our curries and this soup is perfect comfort food for our cold winter months.  I brown-bag this for lunches and have had people inquire about this recipe as they want to have at it and make it for themselves.  I am team home-cooked soup all the way.

Anyone remember that SNL sketch with Justin Timberlake where he’s in a soup costume singing “soup soup a doup”, a la Salt-n-Pepa? OMG, one of my favourites, and it always gets stuck in my head when I’m cooking soup.  Sorry for the ear worm!

Jojo’s Biscuits

This recipe has the coolness factor all over it because, well hello – Joanna Gaines created this recipe!  One of the ultimate cool girls in the world of design.  This recipe is not for the faint of heart as there is three full sticks of butter, yes that ain’t a typo.  There’s a ton of butter in this recipe but it is super delicious.  Especially warmed up with some jam on them.  Sometimes you just have to treat yourself!

Batch meal Sundays allow me to organize and prepare healthy meal plans effectively to save time during the week so that I can concentrate on more important matters such as playing with my son.  If you haven’t tried batch cooking I encourage you to give it a try and see what it is all about for yourself.  I hope you’ve found a recipe that you and your family will enjoy.  Don’t forget to #pursuitofhomeblog so that I can cheer you on!
